- Our olive grove, completed replanted in 2000, is made up of 6,000 trees around Corneilla del Vercol, brought up in Organic Farming, ECOCERT certified.
- We use two local varieties, Olivière and Arbequine, which produce the oil in EXTRA VIRGIN quality, fruity and full of character. Our orchard is located on the last slopes of the Pyrenees, 5km from the Mediterranean Sea. We benefit from an excellent maritime influence with cool nights coming from the mountains, which allows the fruits to develop an unusual aromatic palette.
- The fruits are harvested in the morning to avoid excessively high temperatures. The work of the oil is done under temperature control to freeze the aromas of the fruits: “first cold pressing”. We use a latest generation mill which allows us to crush our harvest in optimal conditions.
TASTING
This oil has exceptional brilliance combined with a beautiful yellow color with intense green highlights. On the nose, it is fragrant and smooth. On the palate, this organic extra virgin oil is very fruity with a medium pungency. It is distinguished above all by its softness, with subtle aromas of hazelnut and freshly cut grass, as well as delicate notes of artichoke.
