We use two local varieties, Olivière and Arbequine, which produce EXTRA VIRGIN quality oil, fruity and full of character. Our orchard is located on the last slopes of the Pyrenees, 5km from the Mediterranean Sea. We benefit from an excellent maritime influence with cool nights coming from the mountains, which allows the fruits to develop an unusual aromatic palette. Completely replanted in 2000, this orchard is made up of 6000 trees located around Corneilla del Vercol. It is conducted in Organic Agriculture, certified ECOCERT.
The fruits are harvested in the morning to avoid excessively high temperatures. The work of the oil is done under temperature control to freeze the aromas of the fruits: “first cold pressing”. We use a latest generation mill which allows us to crush our harvest in optimal conditions. This Organic Extra Virgin oil is very fruity with a medium pungency.
