Aged Wine Vinegar – 750ml

This wine vinegar was produced in the 19th century, using an ancient recipe that has been preserved to this day. It is still made according to this traditional method, without added sulphites, and aged in oak barrels.

Elaboration

• For the production of this vinegar, we select grapes from emblematic Roussillon grape varieties: Grenache Noir, Mourvèdre, Carignan and Syrah.
• We vinify without sulphites with a controlled temperature to preserve the aromatic expression.
• This wine is then brought to our historic vinegar factory and placed in barrels in contact with our century-old mother of vinegar.
• During aging, we use 225L French oak barrels.
• After several years of ageing, the vinegar is packaged without filtration.

Tasting

This vinegar presents intense aromas of cherry, vanilla and lightly toasted wood, powerful and fresh on the palate.
