ELABORATION
- For the production of this vinegar, we select grapes from emblematic Roussillon grape varieties: Grenache Noir, Mourvèdre, Carignan and Syrah.
- We vinify without sulphites with a controlled temperature to preserve the aromatic expression.
- This wine is then brought to our historic vinegar factory and placed in barrels in contact with our century-old mother of vinegar.
- During aging, we use 225L French oak barrels.
- After several years of ageing, the vinegar is packaged without filtration.
TASTING
This vinegar presents intense aromas of cherry, vanilla and lightly toasted wood, powerful and fresh on the palate.
